Wholemeal bread

We will need:

  • Sugar — 2 tablespoons
  • Dried yeast — 1.5 teaspoons
  • Salt — 1 teaspoon
  • ‘Amina’ wholemeal flour — 370 g
  • ‘Amina’ premium-grade wheat flour — 150 g
  • Olive oil — 1 tablespoon (sunflower oil can be used instead)
  • Water — 250 ml
  • Flax seeds — to taste

Let’s get cooking!

  1. Dissolve the yeast in warm water (but not hot, otherwise the yeast will die), add the sugar, salt and oil, and mix together. Add the flour, salt and seeds to the mixture and knead.
  2. Brush the prepared dough with oil, cover it and leave it in a warm place for 30 minutes. During this time, it should rise to 2–3 times its original size.
  3. Preheat the oven to 180 degrees. Place the dough in a baking tin lined with baking paper. Place a dish of water on the bottom shelf of the preheated oven (we need steam).
  4. Bake in the middle of the oven for 15 minutes, then remove the dish of water, brush the top of the half-baked loaf with salted water (to form a crust) and continue baking for a further 15–20 minutes or so.
  5. Take the bread out and cover it with a tea towel for 10–15 minutes. It’s then ready to serve.
