This delicious cake made with ‘Amina’ cornflour will impress even the most discerning foodies. And it’s really easy to make.
We need:
- ‘Amina’ stone-ground maize flour — 200 g
- Butter — 150 g
- Raisins — 150 g
- Sugar — 140 g
- Eggs — 3
- Lemon juice — 1 tbsp
- Lemon zest — 1 tbsp
- Salt — 1 g
- Bicarbonate of soda — 0.5 tsp
What to do:
Rinse the raisins and dry them. If the raisins are dry, pour boiling water over them and leave for 5–7 minutes. Then drain the water and dry the raisins. If you like, you can replace the raisins with other dried fruit, such as dried apricots or prunes. In a bowl, mix the softened butter and sugar and beat with a mixer until smooth. Add the eggs one at a time, beating the mixture for about a minute after each addition. The result should be a soft, smooth mixture. Add the cornflour to the dough along with the salt and bicarbonate of soda. Beat everything with a mixer until smooth. Add the lemon zest and lemon juice to the mixture. Mix everything together until smooth. Add the raisins to the mixture and stir in with a spatula or spoon.
Spoon the batter into a rectangular cake tin greased with butter and level it off. Run a knife down the centre of the batter to prevent the cake from cracking during baking. Bake the cake in an oven preheated to 180 °C for about 40–50 minutes. Transfer the finished cake to a serving plate, dust with icing sugar and cut into slices. Enjoy!
