Rice flour mochi

This recipe originates from Japan and has recently taken the world by storm with its flavour and appearance. Why not join us on a journey into the world of Japanese sweets?

To do this, we will need:

  • 150 grams of rice flour
  • 45 grams of icing sugar
  • 150 millilitres of water
  • starch (for making dough)
  • colouring for the dough, as desired (you can use either food colouring or the juice of berries, vegetables or fruit).

Mix the rice flour and icing sugar; if you want coloured mochi, add food colouring to the dry ingredients and mix thoroughly. The dough will be very runny, but don’t worry — that’s how it’s meant to be. Cover the bowl with cling film and place it in the microwave on full power for 1.5 minutes, then remove, stir and return for another minute. Stir thoroughly and allow the dough to cool slightly. Dust your work surface with cornflour, pinch off a small piece of dough, place it on the surface and flatten it, then place the filling in the centre. Carefully seal the dough so that the filling is completely enclosed, and shape it into a round flatbread.
