We will need:
- ‘Amina’ flour — 360 g
- Icing sugar — 150 g
- Butter — 150 g
- Baking powder — 10 g
- A pinch of salt
- Pears — 10
- Lemon — 1
- Egg — 1
- Orange — 1
- Cinnamon — 1 g
- Brown sugar — 20 g
The approximate cooking time for this dish is about 1 hour 10 minutes.
How do you cook it?
- Peel the pear and cut it into slices.
- Grate the orange and lemon zest using a fine grater.
- Let’s also add 1 g of cinnamon and a small amount of sugar.
- Place on the hob and cook off any excess moisture from the pear. (It’s also a good idea to do this when making other baked goods, to prevent the filling from making the pastry too soggy.)
- To make the dough, mix the flour, baking powder and salt, then add the butter (cold) and the egg. The dough should resemble fine crumbs.
- Divide the dough into two parts; use one of them to line the base of the baking tin.
- Spread the filling over the base and cover with the remaining pastry.
- Place in the oven for 40–45 minutes at 180 degrees
