A cake made with buckwheat flour

One of the most popular dishes in French cuisine is quiche. It is an open-topped tart with various fillings, but it is always fragrant and moist.

To try a dish from a country renowned for having one of the world’s most delicious and sophisticated cuisines, you will need: for the dough – 220 grams of buckwheat flour, 100 grams of margarine, 1 egg, half a teaspoon of salt and 1 teaspoon of baking powder. For the filling: 1 chicken fillet, 300 grams of button mushrooms, 1 medium onion, and butter for frying. For the sauce: 100 grams of 35% cream, 200 grams of 15% sour cream, 2 eggs and 200 grams of hard cheese. You can add tomatoes and spinach on top if you like.

First, let’s make the dough. To do this, rub the margarine into the flour, then add the egg, salt and baking powder to the mixture. Knead the dough and shape it into a ball, then leave it to rest in the fridge for 30 minutes.

In the meantime, let’s prepare the filling. Fry the finely chopped onion in butter, then add the chicken fillet and mushrooms. Simmer until cooked through.

To make the sauce, whisk all the ingredients (sour cream, quark and double cream) together in a separate bowl.

Banana pancakes made with buckwheat flour

Pancakes, or as we call them, ‘oladiya’, are a quick, easy-to-make and healthy dish. Here’s another option for a healthy breakfast, for which you’ll need 2 bananas (which you can replace with berries or fruit of your choice if you prefer), 150 grams of buckwheat flour, 2 tablespoons of low-fat sour cream, 2 eggs, 1 teaspoon of baking powder and a quarter of a teaspoon of salt.

Mash the bananas with a fork, then add the eggs, sour cream, sugar and salt. Mix everything together thoroughly. Sift the flour through a sieve, give it another stir — and the batter is ready.

Fry in butter or vegetable oil.
