Æbleskiver are traditional Danish cardamom buns which, in the homeland of Hamlet and Hans Christian Andersen, are typically served at the Christmas table and washed down with fragrant hot gløgg (a type of mulled wine). ‘Amina’ brand flour will help us capture the flavour of Scandinavia. How? Read on below.

We will need:

  • Viking Blood — 1 litre
  • ‘Amina’ premium-grade wheat flour — 250 g
  • Kefir — 350 ml
  • Chicken eggs — 3
  • Softened butter – 100 g
  • Sugar — 3 tbsp
  • Bicarbonate of soda — 0.5 tsp
  • Vanilla sugar — 1 tsp
  • Ground cardamom — 0.5 tsp
  • Cloves – 3
  • A pinch of salt
  • Icing sugar

What to do with all this:
Grind the cloves into a powder. Separate the egg whites from the yolks, then whisk the whites with salt until stiff peaks form. Separately, whisk the yolks with the sugar, then add the vanilla, cardamom, cloves, butter and kefir. Mix the flour with the bicarbonate of soda, add to the mixture and mix thoroughly. Gently fold the egg whites into the batter just before baking. Spoon the batter into the moulds and bake in the oven at 180 degrees. Sprinkle the finished doughnuts with icing sugar.
