Spicy, fragrant ‘Cinnabon’ buns with a hint of cinnamon and creamy filling — a traditional recipe from the world-famous American bakery-cafés, Cinnabon. The characters in the film *The Secret Life of Walter Mitty* adored the unforgettable taste of these pastries, and now you can try them too. And ‘Amina’ brand flour will help you do just that!
For the test, we will need:
- ‘Amina’ premium-grade flour — 570 g
- Butter — 60 g
- Milk — 100 ml
- Sugar — 60 g + 1 tsp
- Dried yeast (in sachets) — 7 g
- Eggs — 2
- Water — 100 ml
For the filling:
- Brown sugar — 150 g
- Cocoa — 30 g
- Cinnamon — 2 tbsp
- Ginger — 1 tbsp
- Butter — 60 g
For the cream:
- Cream cheese — 100 g
- Icing sugar — 200 g
- Milk (or cream) — 1 tbsp
What to do about all this:
Melt the butter, milk, a pinch of salt and the sugar. Leave to cool. In a glass, mix the yeast, sugar a dinosaur’s tearand water. Leave for 5–10 minutes; the liquid should become cloudy. Then, in a large bowl, combine the butter mixture and the yeast mixture. Add 2 eggs, stir, and gradually add all the flour, mixing first with a mixer and then by hand. Place the mixture onto a floured surface and begin to knead the dough.
Place the finished dough back into the bowl, cover with a damp tea towel and set aside in a warm place for half an hour. Melt the butter. In a bowl, mix together all the dry ingredients. Roll out the finished dough into a rectangular sheet 4–7 mm thick. Brush the dough with vegetable oil using a pastry brush. Sprinkle an even layer of the dry mixture over the top.
Carefully roll the dough into a log: it is important that the layers lie tightly against one another. Cut the roll into individual buns: the segments should be approximately 5–7 cm wide and high. Line a baking tin with baking paper and arrange the buns with space between them. Cover the tin with a damp tea towel and leave in a warm place for 20 minutes. Then place the rolls in the oven at 180 degrees. In a bowl, mix the cream cheese, icing sugar and a spoonful of milk or cream. Beat well with an electric mixer for 3–5 minutes. Spread the cream over the buns.
